Growing up in the Philippines, as the youngest of seven siblings, making jerky wasn’t just a recipe—it was my family’s livelihood and helped put me through university. I learned the importance of quality ingredients, patience, and traditional techniques from an early age.
When I moved to Australia more than 25 years ago, I dreamed of sharing those family recipes with Australians.
In 2014, Malcolm and I started Mallorys Jerky with one simple goal: Create premium handcrafted jerky that people couldn’t find anywhere else.
We began with our signature pork jerky and gradually expanded into beef, chicken, kangaroo, and limited-edition flavours that continue to surprise and delight our customers.
This is more than our business—it’s our passion, our heritage, and our way of sharing something we love with families across Australia.
